November 14, 2008, Newsletter Issue #231: Broccoli and Cauliflower aka The Cruciferous Vegetables

Tip of the Week

If Broccoli and Cauliflower are among your favorite vegetables you will be glad to know that they are one of the most healtfhul vegetables that you can eat, if you will recall, they are listed on one of my previous blog entries entitled, "The Superstars".  According to research, consumption of these cruciferous vegetables is known to reduce the risk of a number of cancers, especially lung, colon, breast, ovarian and bladder cancer. Also, studies have revealed that these vegetables provide significant cardiovascular benefits as well.

These vegetables can be eaten raw or cooked.  If you prefer to cook them just be sure not to overcook instead steam them so they don't lose most of their nutritional values.   They taste great over pasta and through the years I have prepared my own version of a delicous meal which my children who are quite the picky eaters have always enjoyed as well.

You can view this recipe under the Category "Vegetarian Recipes" and the Title "Broccoli and Cauliflower with Angel Hair Pasta".  Enjoy!
