May 21, 2010, Newsletter Issue #308: The Rich and Creamy Avocado

Tip of the Week

Who doesn't love a good avocado salad served with a little bit of olive oil and salt?  It makes my mouth water just thinking about the rich and creamy texture that is truly delicious.  Although they are high in calories and fat, the fat is mostly monounsaturated which isn't as bad.

Although it is technically known as a fruit, avocados are treated as vegetables for the most part however they are sometimes used in desserts such as ice cream.   Here is the link to a recipe:

To prepare, Avocados can be diced for salads or pureed to make *guacamole or sandwich spread. When you buy Avocados they are best while they are still hard and ripened at home in a paper bag.  You'll know when they are ripe if they yield to a gentle squeeze.   However, they do darken once they are cut so serve them right away.  If not, sprinkle with a little lemon or lime juice to slow the discoloration.  Avocados shouldn't be refrigerated, frozen, or cooked.  They are always eaten raw.

*When preparing Guacamole leave the pit within the dip to keep it green.
