Carrots Aren't Just For Rabbits

Most of us can recall our mothers telling us during our childhood days how good carrots are for our eyes. A mere half-cup serving of cooked carrots packs a walloping four times the RDA of vitamin A in the form of protective beta-carotene. Well, as they say, "Mom does know best", for the most part anyway. It is true that eating carrots may help prevent cataracts and keep your eyes healthy, but the extra vitamin A it contains won't necessarily help you see better so even if you ate a pound of carrots everyday it won't give you 20/20 vision if your eyesight is poor. According to research findings carrots also contain a large amount of antioxidant compounds which help to protect against cardiovascular disease and cancer.

Carrots are delicious eaten raw or cooked. Children especially love to eat them raw and dipped in their favorite dressing. If you prefer to eat them cooked try not to overcook them to ensure that they retain their maximum flavor and nutritional content.
