Ingredients Taco or tortilla shells
Fantastic Foods taco mix
2 cloves crushed garlic
˝ cup white vinegar
˝ cup pineapple diced [fresh or canned]
Fresh cilantro
2 key lime – squeezed juice
1 pinch cinnamon and nutmeg
1 tbsp sour orange [optional]
1 tsp bitter chocolate [optional]
Prepare taco mix as directed then add in desired ingredients including fresh garlic, vinegar, pineapple, cilantro, lime juice, cinnamon, nutmeg, sour orange and chocolate as desired.
Toppings 1 fresh tomato diced
1 avocado diced
1 green pepper diced
1 red pepper diced
1 onion diced
˝ head lettuce shredded
Cheese substitute [or cheese if not vegan]
Directions
Prepare your vegetarian tacos by combining the taco mix and diced toppings in bowl. Let each person add their own toppings of lettuce, tomato, avocado and peppers as desired. Serve with Fantastic Foods Black Beans or Instant Refried Bean and Rice for a delicious vegetarian mexican dinner!

1 small can crushed tomatoes
1 fresh tomato diced
3-4 fresh scallions diced
1 green pepper diced
2-3 cloves fresh garlic
1 tbsp vinegar
1 tbsp olive oil
3-4 tbsp crushed fresh cilantro
3 key lime juice
Salt, pepper [optional]
Avocado diced [optional]
Directions Prepare Fantastic Foods Baja Black Bean Chipotle Soup as directed. Add crushed tomatoes, a small portion of the fresh tomatoes, scallions and green pepper. Set aside the rest of the tomatoes, scallions and peppers for fresh garnish. Add in fresh garlic, vinegar, olive oil, cilantro, lime juice and salt or pepper as desired. Stir and let simmer over low heat for 15 minutes.
Serve with warm tortilla chips and garnish with fresh tomatoes, peppers and scallions. For a fresh summer treat, refrigerate until cooled and serve with fresh diced avocado and tortilla chips.
