Easy Vegetarian Food: Vegetarian Lasagna Everyone will Love!

This vegetarian lasagna recipe will quickly become a favorite. Not only is this a great example of easy vegetarian food, but it’s a great way to introduce vegetarian meals to non vegetarians! It’s so close to the original they may not even realize its vegetarian lasagna!

Ingredients

  • 9 quick cook lasagna noodles
  • 1 egg [or egg substitute for vegan option]
  • 2 cans of well drained spinach
  • 1 small can of diced tomatoes [14.5 oz]
  • 1 large can of tomato puree
  • 2 cups of ricotta cheese [or cheese substitute for vegan alternative]
  • 1 pound grated mozzarella cheese [or cheese substitute for vegan alternative].
  • 1 large onion-diced
  • 6 cloves fresh crushed garlic
  • 2 green peppers – diced
  • 6-8 oz fresh sliced mushrooms
  • Small cut broccoli flowerets diced
  • 1 small can black olives
  • Salt and pepper
  • 1 tbsp Oregano
  • 1 tbsp Sugar [optional]
  • Olive oil
Directions

If using quick cooking lasagna noodles then set aside, otherwise boil lasagna noodles until flexible. Rise and set aside.

Stir fry the chopped and diced vegetables with the olive oil, crushed garlic, green pepper and other vegetables until tender. Add diced tomatoes, puree and spinach to the mixture. Add salt, pepper and oregano. Season to taste. Add optional sugar. Let simmer while you whip 1 egg into the ricotta cheese. Set aside.

Assemble

Pass a light coat of tomato puree onto a rectangular baking pan that is long enough to accommodate the length of the noodles. If you are using a lasagna pan then lay three noodles side by side in the bottom. Add a layer of the sauce mixture and make sure to cover all the noodles so you cannot see them. Add a light layer of the ricotta cheese mixture and lightly spread over the entire area. Sprinkle mozzarella cheese over the entire area. Repeat 2 more times. Add the last layer of noodles without the ricotta cheese. Cover with foil and bake at 350F for 40 minutes. Uncover and bake for 10-12 minutes more. Let cool for 10 minutes and serve.


This will feed a large family or is great frozen for later!

BBQ Veggie Burgers

Summer means grilling and BBQ and vegetarian meat free alternatives are delicious grilled or BBQ’d as well! Here is what you need to know to make scrumptious grilled veggie burgers, veggie dogs or other meat free alternatives for yourself, your family and friends!

  1. Clean the grill! This is a courtesy for your meat free friends but keep in mind, many people do not want to place their meat-free dish on a contaminated space. It will also reduce sticking.
  2. Remember that veggie burgers and veggie dogs have less fat than regular meat. Less fat often means more ‘sticky’ so plan accordingly. Coat the grill and the burger with a thin layer of olive oil. You can also spray the grill with non-stick cooking spray if you use that type of product.
