
15 Minute Delight: Easy Asian Fried Rice
This
easy vegetarian recipe is a must-have for every kitchen! In less time than it takes to pick up your favorite take out, you and your family can enjoy this
vegetarian fried rice recipe. It makes a delicious side dish and leftovers will be a thing of the past so be sure to make plenty!
This recipe is for two to four servings, but can be easily modified for larger or smaller amounts as desired.
Ingredients
2 cups of water
1 cup of rice
1 tablespoon of sesame oil [other oil may be substituted as desired]
2 cloves of fresh garlic
2 -3 scallions diced
1 small knob of fresh ginger
½ small head of cabbage
1 cup diced or sliced mushrooms
½ cup frozen peas
½ cup corn
¼ cup orange juice or fresh squeezed if available
Optional: soy sauce, salt and pepper
Directions:
Cook the rice as instructed and then transfer to a warm frying pan or wok. Coat the bottom of the wok or frying pan with a thin layer of sesame oil (or the oil you choose).
Stir fry the cabbage, corn, peas and mushrooms until tender. Drain if needed, then add in the rice and the remainder of the ingredients and toss over a warm heat. Season with salt, pepper and/or soy sauce and enjoy this easy vegetarian recipe!
