The So-So Vegetables

When compared to the nutritional values of those vegetables in the first two category these are not as beneficial to your health. Let's take a look at this list:

Corn, Jicama, Lettuce(iceberg), Lima Beans, Mushrooms, Potato(white), Rhubarb, Water Chestnuts

It looks like corn and potato are the most popular vegetables on this list especially with children. We know how much they love corn on the cob and french fries. It's okay to eat the vegetables on this list, but try to limit your intake since some of these are too starchy and/or high in calories.

Can you please elaborate on how lima beans and mushrooms are on this list? I eat them often and thought i was eating healthy while cutting calories.

I love rhubarb. My mother used to just cook it with a little water, add sugar and strawberries. Delish

Jibii and Lizz,
I didn't mean to imply that the vegetables on this list are no good. As you can see I have clarified this tip and when compared to the other two categories these are not as nutritional and some of these such as corn and potato can be starchy and high in calories. As far as the mushrooms and lima beans, again, they are fine to eat, so enjoy!
