Pass The Peas, Please

Although Green Peas are usually considered to be vegetables, they are actually legumes.   Don't let their tiny size fool you into thinking they don't offer much nutritional wise because they are a great source of vitamins, A, B, and C plus iron and potassium as well as pectin, a soluble fiber.   Also, a cup of peas will provide more than 8 grams of protein.  So, we can't always judge a book by its cover as they say.


When shopping for peas it is best to purchase them either fresh or frozen.  To preserve their nutrients, cook peas lightly by steaming or stir-frying.  They can also be eaten raw for more nutritional value. Whether you eat them raw or cooked they are one of the most important foods to include in your diet.  Green peas are usually popular with children probably because of their size.
