What is a healthy, quick, and easy vegetarian breakfast or snack?

Orange Shake

Combine all the following ingredients in a blender or food processor until smooth.
1 pkg. soft tofu
1 cup frozen orange juice concentrate
1 ripe banana
1 1/2 cups water

Makes a great pick-me-up first thing in the morning!
