What is a recipe for tomato pesto?

Sun-Dried Tomato Pesto

Great served with crackers or fresh bread.

  • 1/2 cup sun-dried tomatoes
  • 2/3 cup fresh basil leaves
  • 1/2 cup pine nuts
  • 1 clove garlic, chopped
  • 1 tbsp lemon juice
  • 1 tsp nutritional yeast
  • 1/4 tsp salt pinch pepper

Soak tomatoes overnight in 1 cup cold water. In food processor, blend ingredients until smooth. If the mixture is too thick, add 1-2 tbsp water or tomato juice.
