Fruit Cake
3 cups whole-wheat flour 1 tsp mixed spice 1-1/2 tsp baking soda 3/4 cup margarine 3/4 cup sugar 1-1/2 cups currants 3/4 cup golden raisins 1-1/4 cups soy milk 1 tbsp lemon juice Sift together flour, spice, and baking soda in a large bowl. Rub in the margarine until the mixture resembles bread crumbs. Add all the remaining ingredients and mix well. Leave the mixture overnight. Turn into a greased loaf pan, bake in 325 F oven for 2 hours. Freezes well.
