Make a list of your favorite vegetarian foods and easy vegetarian meals and post it in the kitchen. (Maybe behind a cabinet door). Some may be non-vegetarian favorites also, like grilled cheese, vegetarian pizza, bean burritos, etc. When you canīt think of something for a meal, check your list. This should also stop you from filling up on snack foods instead of having a healthy meal.
