We might not always agree on how to pronounce it, but I'm sure we can all agree on the fact that the tomato is one of the most popular vegetables out there and probably one of the most nutritious to eat.  It contains a lot of Vitamin C as well as the powerful antioxidant called lycopene.  Studies have shown that lycopene can lower the risk of colorectal cancer, stomach, and prostate cancer as well as inhibit the growth of other types of cancer cells.   To help absorb the lycopene in the tomato try cooking it in a little bit of olive oil. For example, when preparing tomato sauce even if the recipe doesn't call for it just add about a tablespoon to the pot  while cooking.  The other thing you might want to keep in mind is that the process of cooking doesn't cause tomatoes to lose any of their nutritional value unlike other vegetables.
